3/4 cup white whole wheat flour

2 tablespoons Bioglan SuperFoods Maca Powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 cup Bioglan SuperFoods Organic Coconut Oil, melted

1/2 cup granulated sugar

1/4 cup plain coconut kefir (or use 1/4 cup plain soy milk and 1 teaspoon white vinegar)

1 teaspoon vanilla extract

1 cup unsalted macadamia nuts



Preheat the oven to 180C and lightly grease a 20cm x 10cm loaf pan. In a large bowl, sift together the flour, maca powder, baking powder, salt and cinnamon, then whisk to combine. In a separate large bowl, whisk together the coconut oil, sugar, kefir and vanilla. Pour the wet ingredients into the dry and use a spatula to fold together until just combined. Transfer the batter to the loaf pan and smooth the top, then sprinkle the macadamia nuts evenly over, using your fingers to lightly press them into the batter. Bake for 20-30 minutes or until golden brown around the edges and a toothpick inserted into the centre comes out clean. Allow to cool completely in the pan before slicing.
